Healthier Apple Salad ~

This healthier apple salad is packed with so many nutritious super foods you need to stay healthy. You’ll find good fats from the Omega –3’s in the walnuts, and apples which contain quercetin that contributes to healthy lungs. Orange juice and lemon juice provide vitamin C which helps keep our immune system strong.

3 medium chopped apples

1/3 cup orange juice

1 tablespoon lemon juice

¾ cup finely chopped celery

½ cup raisins

½ cup walnuts

1-cup plain nonfat yogurt

1-tablespoon honey

Cover apples with 1 tablespoon orange juice and lemon juice as soon as you chop them and mix well to prevent them from turning brown. Add celery, raisins and walnuts.

            Mix yogurt, honey, and remaining orange juice until smooth.

            Pour dressing over salad and mix well.  Cover and chill before serving.  Makes about 6 servings.
